    I am so grateful to have found your site! It is just the information I need to do a Thanksgiving Dinner for our international collage group of 400. One question I do have is, what is the proportion of cream cheese and sour cream you use for the potato pearls? I have never added that to my potatoes but it sounds like it would improve the taste . At what point do you add it? Thanks for any help!

      Thanks, Janice. We mix up our potatoes in our big mixer with the paddle attachment. First put in 1 cup sour cream, 8 ounces cream cheese and 1 gallon boiling water and mix on low speed for a few minutes. Then add 1 package potato pearls and mix again. Then add 15 cups boiling water and the second package of pearls. Turn the mixer on low again and mix until well blended. This amount will fit in a full size, 4 inch deep disposable pan. Cover and let sit at least 10 minutes. This is about 50 servings. The best pearls we have found are the Excel complete.
