Planning for the 2013-14 education, worship and meals is well underway.  Enjoy the last few weeks of summer, and we’ll be back for dinner on September 18th!

Volunteer Help Needed in the Calvary Kitchen for prepping and cooking for the Wednesday Evening Meals.  Some prep work is done on Tuesday mornings for about 3 hours, starting at 9:30 am.  The rest of the meal is prepared on Wednesdays starting at 1 pm until serving is finished at 6:15.  Any amount of time you could work on either, or both, of these days would be helpful.  If you like to cook or would be willing to learn, please join us in this very important ministry. Wednesday Evening Meals begin on September 18th and will follow the education calendar for 25 weeks, with some holiday breaks, through April 16th.  If there are no education classes, there will not be a meal.

 

After some thoughtful debriefing and planning based on feedback from last year, we will be implementing a few changes to the dining service this year:

1.  The suggested donation amount will be $5 for adults and $3 for children under 12, instead of $4 for everyone.  

2.  No take out meals will be provided during the serving of dinner between 4:45 and 6:15pm.  If you would like to give an extra donation and take home some extra food after everyone has been served, please check with the kitchen staff after 6:30pm.  We will be doing this in an effort to make sure we do not run out of food for those who come to church for dinner.

 3.  We will be providing a salad bar every week, based on requests to provide a vegan/vegetarian option at each meal.

4.  We need everyone’s help with clean up in the dining room, as we never seem to have enough volunteer help to keep up.  Please return your dishes to the dirty dish station as soon as you have finished eating.  If you are able, please help us out by scraping and stacking your dishes and throwing away your garbage.  Feel free to stay in the dining room after you have returned your dishes and enjoy your fellowship time.  

Please join us on Wednesday evenings this year to share a meal, make new friends and enjoy some time with old friends.  Consider volunteering in the kitchen or dining room, where serving others can make your heart happy and put a smile on your face.

Snowball fight anyone?

Another snow day tomorrow, April 17th!  The forecast is for maybe a foot of snow by tomorrow afternoon in Rapid City.  Today the kitchen crew at Calvary worked hard on getting food ready for the meal tomorrow night.  48 pound cakes have been baked and 200 pounds of roast beef have been roasted.  Then we got the word…no school tomorrow.  Therefore, no Wednesday school, no meal, no worship service at Calvary Lutheran Church either.  No worries!  Into the freezer it went, and we’ll thaw it out for dinner next Wednesday night.  That will be our last meal until September and the kids will be singing in worship.  We hope to see you all there.

 

The menu for April 24th, 2013 will be:

Your choice of Roast Beef, Sloppy Joes, or BBQ Pulled Chicken

Baked Potatoes

Green Bean Casserole

Dinner Rolls or Biscuits

English Trifle (a layered dessert with homemade pound cake, mixed berries, pudding and whipped cream)

April 10, 2013 will be a snow day for Calvary Lutheran Church in Rapid City.

NO Wednesday education classes, NO dinner, and NO worship service.

Next week, April 17th, we will make the roast beef dinner menu that was planned for this week.

We got lots of compliments on the Edamame Salad that we served last Wednesday, and again for the Sunday meal for the Feeding South Dakota fundraiser.   Here’s the recipe for those of you who asked for it, and if you didn’t get a chance to try it, I highly recommend it.  You can serve it as a side salad or as a dip with tortilla chips.  Shelled edamame (soybeans) can be found in the freezer section of your grocery store.  If you like it spicy, add the jalapenos or if you want a milder chili pepper taste, add some canned mild roasted green chilis.  This recipe is adapted from the cookbook Raising the Salad Bar, by Catherine Walthers.

Edamame, Corn and Bean Salad

Serves 6-8

1 cup edamame (15 oz), boiled until just tender, then rinsed under cold water and drained

1 cup kidney beans (or black beans) (or a 15 oz can) Rinsed and drained

2 cups corn kernels, canned or frozen, if frozen boiled until tender and rinsed under cold water and drained

1/3 cup chopped fresh cilantro

1 cup diced tomatoes, canned or fresh

diced jalapenos or roasted green chilis, optional

 

Salsa Dressing

Mix dressing ingredients together and toss with salad.

2 TBSP minced red onion

1 tsp ground cumin

3 TBSP fresh lime juice

2 TBSP olive oil

salt to taste

 

Edamame, Corn and Bean Salad

Serves 500

40# frozen, shelled edamame, boiled until tender, then rinsed with cold water and drained

5 #10 cans Black Beans, rinsed and drained

50# frozen corn kernels, boiled until tender, then rinsed with cold water and drained

20 cups chopped fresh cilantro (1 case 30 count bunches)

5 30 oz cans roasted green chilis (optional)

diced jalapenos, fresh or canned (optional for added spice)

5 #10 cans petite diced tomatoes

Salsa Dressing

7 cups minced red onion

1 1/3 cups ground cumin

5 ½  cups fresh lime juice (about 6 # limes)

8 cups olive oil

salt, to taste
