Can I ask you how many people you cook for and how many pounds of raw roast you buy? I recently took over our church kitchen and find inspiration from you! I’ve been wanting to have a roast night, but am just unsure how much to allot per person…I cook for around 250 people each Wednesday, at our First Baptist Church in Rockwall, Texas…thank you!!

Jill, I’m glad you found my blog and I’m happy to help. One of the reasons I started the blog is that I had trouble finding large quantity recipes. I thought I could share some of our successful ones to help out other churches doing the same thing we are. We’ve made roast beef quite a few times, and it always turns out great. I order 7 oz per person, uncooked weight, using eye of round roasts that I get from Sysco. Each roast weighs an average of 6#. We put 2 roasts per pan, spray the tops with a garlic oil spray, sprinkle with Canadian Steak seasoning, add about 2 inches of water in the pan, cover with foil. Bake at 375* for about 5 hours, or until tender. Good luck, and feel free write again if you have more questions. Karen

Thank you so much for responding! Sorry I’m just seeing this (I had typed my email in wrong above :()…your blog has been very helpful, and I agree that recipes are so hard to come by! I will definitely bother you again in the future :). I’d love to have your broccoli rice casserole recipe! We must have similar minds, as I served walking tacos a couple of weeks ago :). We use Sysco as well, so I truly appreciate you sharing your secrets with me. What ham do you order? Thinking of doing that mid-November as well. Hope you have a blessed week!

I order the Farmland Pit Ham (boneless, hickory smoked) from Sysco. When I plan for 600 people, I order 7 cases (14 hams, 14 pound average size). We slice them with our meat slicer, then warm up the slices in our large roasters with a little water added to keep it from sticking. I’ll try to get the recipe for 500 serving size broccoli rice casserole posted for you tomorrow.
