    • Karla is using a ready made chicken product from Sysco. It’s called Classic Sysco Breast of Chicken Cordon Royale, breaded and boneless, filled with pre-cooked ham and a blend of cheeses.

Would you share your cordon blue recipe? I feed less than 100 and am curious how you prepare for such a large crowd. How many people prepare meals for 500? Does the same group decorate weekly?

    • Hi Carlotta! Welcome to our blog. The cordon blu was a cook and serve product made by Sysco called Classic Sysco Breast of Chicken Cordon Royale. This is the 10th year of our Wednesday meals at Calvary Lutheran, and for the first 6 years we had an all volunteer staff of 10-12 which I coordinated as a volunteer. The next 2 years we added 40 hours of paid help that was split between 3 people, and I continued as a volunteer coordinator. Starting last year, Calvary hired a food service coordinator who now plans the meals and supervises about 5 volunteers who prepare the meal each week. We cook for about 3 hours on Tuesday morning and start dinner prep on Wednesdays at 1pm. Our dining room decorations are coordinated by a volunteer who has her own little crew of helpers. I hope this helps. Feel free to email me if you have other questions. Karen at kschleusener@gmail.com
